Ellen’s Tofu Scramble [Recipe]

Thanks for the recipe, Ellen.

Ingredients:

  • 1 box Fantastic brand tofu scrambler mix (Mother Earth has it)
  • 1 block of extra firm tofu
  • Green peppers, cherry tomatoes, shiitake mushrooms (you can get this stuff at the Farmers’ Market)

Preparation:

Mush up tofu and heat with oil in pan. Use 1 pack of Fantastic mix (each box comes with two packs)
